White Peach Bellini
Our all time favourite fruit based cocktail has to be the classic White Peach Bellini. Bang in season and perfect for the summer months.
Our rather bold attempt at Bellini for 40 people!
4 chilled white peaches
1 bottle Prosecco ( we currently sell 4 excellent ones)
Squeeze of lemon juice
Splash of sugar syrup
Peel and stone peaches, blend until puréed. To stop going brown add a squeeze of lemon juice, not too much, then balance with a splash of sugar syrup. Add a few tablespoons to each flute and slowly add chilled Prosecco. Let the foam die down after each pour.
