Smoked haddock soufflé Jersey Royals and asparagus with white Rioja

Asparagus has long been a nightmare to match with wine, so we were blown away by how good white Rioja was for standing up to the strong flavours found in asparagus. Served here with bang in season Jersey Royals and the best of British asparagus. The smoked haddock soufflé was also a perfect match for the Rioja and had a hidden surprise delight of a soft egg yolk within the soufflé.

The wine was 1999 Vina Tondonia Blanco Reserva Rioja the waxy richness slotted right into asparagus and haddock, clearly a grand bottle but any traditionally made white Rioja will work equally as well.
